Salmon, stir fry veg, wild rice and hoisin sauce

A healthy salmon dish - only 652 calories!

Ingredients

  • 2x Steamed salmon portion
  • 1x carrot sliced thin with a potato peeler
  • 200g x white cabbage, roughly chopped
  • 2x pak Choi roughly chopped
  • 300g bean shoots
  • 1/2 tin sweetcorn
  • 1x red pepper
  • 1/2 x red onion
  • 150g x washed wild rice (or enough for 2 people)
  • 75g hoisin sauce

Method

  1. Chop all veg and place in a bowl together, ready to cook.
  2. Steam your salmon fillets for around 15-20 minutes until cooked to your liking, or cook them the day before to make the meal quicker.
  3. Place the rice in a pan and bring to the boil. Cook according to the recommended time on the package, then drain.
  4. With 5 minutes left of the salmon and rice, heat some spray olive oil (only 2 pushes) in a wok till the wok is really hot.
  5. Add the veg and cook for between 5-7 minutes. If the veg is not cooking, add a splash of water, not too much, as you want the water to steam off the veg.
  6. Add a drizzle of the hoisin sauce to the veg.
  7. On a plate, add the wild rice on the bottom and stack the veg on top of the rice, followed by the salmon, and then use the rest of the hoisin sauce to drizzle over the top.
  8. If you want to be very fancy, chop some coriander very finely and sprinkle over the top, but only a little bit
